Fluffy Vanilla Blueberry Protein Cake

Join me in my kitchen in making this DELISH Protein Vanilla Cake! You cannot beat these macros for CAKE…

Ingredients:

CAKE

  • 90g vanilla protein powder (OF COURSE l used 1st Phrom’s Level 1)
  • 1 1/2 cups almond flour
  • 10oz Truvia sweetner
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1/2 cup vanilla Greek yogurt
  • 1 cup applesauce *not sweetened*
  • 1/4 cup fat free fairlife milk
  • 3 large egg whites
  • 1 teaspoon vanilla extract
  • 1 cup blueberries

FROSTING

  • 15g Vanilla protein powder
  • 1/4 cup fat free fairlife milk
  • 1 1/2 cups powdered sugar

Directions:

  1. preheat oven too 350 degrees. Spray a baking sheet or cake pan and set aside.
  2. Combine dry ingredients using a mixer- protein powder, flour, sweetener, salt, baking soda.
  3. Add in wet ingredients- greek yogurt, applesauce, milk, egg whites, and vanilla.
  4. Stir blueberries in to combine.
  5. Spread mixture onto pan and pop in oven for 15-20 minutes or until edges are golden brown and knife comes out clean!
  6. While cake is cooking- add all frosting ingredients to mixing bowl and stir to combine.
  7. Once cake is cooled, drizzle frosting over top of your fluffy cake. Cut into 10 equal servings and enjoy!
